Creamy Potato Soup

Those first few days of cool weather around here, and guess what happens in the kitchen? Yes, you guessed it!
Time for a big pot of potato soup! I’ve made a few different varieties of potato soup before, but this one
turned out to be a favorite! The perfect amount of creamy goodness, with tons of flavor!

6 slices Bacon

2 cloves Garlic

1/2 White or yellow onion

5-6 medium Yukon gold potatoes

2 cups Chicken stock

1/4 cup All-purpose flour

1/2 tsp Black pepper

1 tsp Sea salt and 1/2 tsp garlic powder

1 cup Cheddar cheese, sharp

1/4 cup sour cream, plain

2 cups Milk
-
3 tablespoons (reserved) bacon grease or butter
First, slice the bacon and fry it until crispy…place on a paper towel to add to the soup later.
Use the bacon grease in a stockpot to saute’ the chopped onions and garlic until soft.
Add the flour and stir to create a roux…this serves to thicken the soup.
Stir in the chicken stock, milk and potatoes. Add the seasonings. You can even add a small dash of cajun seasoning for a little KICK…just how we like it down here in Louisiana 🙂
Toss in the sour cream and some of the bacon pieces. Stir frequently to keep from sticking.
Allow the soup to simmer until the potatoes are soft.
I let our soup simmer for about 2 hours before serving…but it should only take about 40 minutes.
And now it’s time to add all. the. toppings.
One of my favorite toppings for hot soup is homemade croutons! I simply cut french bread into chunks and place them on a baking sheet. Drizzle with olive oil, garlic powder, Italian seasoning, and sea salt. Broil on low until crispy.
Serve the potato soup in individual bowls and add a little (or a lot) of bacon, cheese, sour cream, and croutons.
This makes a perfect weeknight meal, without spending all day in the kitchen. ANNND, you can make double to save for leftovers 😉
